Quinoa Salad (Vegan approved)



As an alternative to Chicken or Tri Tip.


Cook one cup Quinoa in water just like rice until nice fluffy.

Add: 1/2 cup freshly diced veggies such as cucumber, sweet red peppers, zucchini,
1/2 cup finely diced cucumber
1 tbsp chopped fresh parsley and mint
1 tsp chopped fresh thyme

Dressing:  2 tbsp. Extra Virgin Olive Oil, Ginger, tee spoon apple cider mix up and toss with the other ingredients.  Chill for 2 hours in fridge and enjoy! Bring some in for us too!
